Cheese curds (squeaky cheese) are an essential product of the cheesemaking process. After the cheese is milled (but before it is put into forms to make wheels and aged), it start out as curds. Fresh cheese curds have a slightly rubbery texture and squeak when you eat them, giving them the nickname of “Squeakers.” We began making Squeaky Cheese in March of 2001.
